had an all day vegan baking day yesterday (saturday), with some great cookies, cupcakes, muffins, et al.

Perfect Vegan Snickerdoodles
Recipe by Kreeli

1 cup margarine
1 1/2 cups granulated white sugar
1 tsp vanilla
4 tbsp soy milk whipped with 2 tbsp cornstarch
3 cups unbleached white flour
1/2 tsp salt
1 tsp baking powder
1 tsp tapioca starch or cornstarch

2 tbsp cinnamon
4 tbsp granulated white sugar
1 tbsp cocoa powder (optional)

Preheat your oven to 300 F.

In a large bowl, cream the margarine and sugar together until smooth. Add the vanilla, and the cornstarch/soymilk mixture, and beat until well-mixed.

In a smaller bowl combine the flour, baking powder, salt, and tapioca/corn starch. Stir this into the wet ingredients and combine well.

In a very small bowl stir together the granulated sugar, cinnamon and cocoa powder (if desired).

Begin rolling the cookie dough into balls of about 3 tbsp each. Roll each ball in the cinnamon/sugar/cocoa powder mixture until completely coated and place on an ungreased baking sheet. Continue until all the dough is used up. Using the bottom of a glass, press down on each ball until they are about an inch thick. Bake for 12 - 14 minutes, and no more. The cookies should still seem very soft when you remove them from the oven. Let cool on the pans for about 10 minutes, and then transfer to a wire baking rack and let cool completely.

Makes about 30 cookies. This recipe can be halved, if desired.


and in the interest of balance, here's my family's traditional recipie:

SNICKERDOODLES

1/2 cup butter or margarine, softened
1/2 cup shortening (crisco)
1-1/2 cups sugar
2 eggs
2-1/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
2 tablespoons sugar
2 tablespoons cinnamon

Heat oven to 400. Mix thoroughly butter, shortening, 1-1/2 cups sugar and
the eggs. Blend in flour, cream of tartar and baking soda. Shape dough by
rounded teaspoonfuls into balls.

Mix 2 tablespoons sugar and the cinnamon; roll balls in mixture. Place 2
inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until set.
Immediately remove from baking sheet.

Makes about 6 dozen cookies.

Hint: Sometimes you need to mix up a little more sugar and cinnamon to coat
the balls. OK? Have fun!


final verdict. they're both very good. the vegan types are counterintitive for regular bakers as they come out quite soft (16 minutes seemed the best balance, btw) and have to rest and set on the tray. if i had to pick which is better, the traditional is (it is less greasy and has slightly less aftertaste, if you can believe that) but no one outside of a hardcore snickerdoodle-er-ist would know the difference.

Yesterday I made a delicious vegan orange-cranberry loaf with pecans on top.

It was from a family recipe but I replaced butter with Smart Balance and eggs with Ener-G.
